Gin
Based on our "waste not, want not" principle and with a focus on circularity, we produce the base alcohol for our gin on-site from surplus wine and lees from wine production.
First, we steep European juniper berries overnight in our base alcohol - then we distill with our own blend of botanicals, including chamomile, orris, angelica, and fresh and dried citrus. After that, we dilute to 46% ABV with distilled water.

Dreamweaver
Rum
Blackstrap molasses made from El Salvadorian sugarcane sourced in Germany, blended with Danish sugar, pure water, and fast-fermented at 30 degrees Celsius for flavor.
Then distilled to around 120 proof and aged in rye and port oak barrels.
It's just no-frills rum handcrafted from the ground up. Solid!

We pick these apples ourselves - just a few miles down the road. And, luckily, they are some of the tastiest in the world. Elstar apples - a variety cultivated in the 1950s by crossing Golden Delicious and Ingrid Marieā¦
We juice them and add sugar, water, and yeast - That's it. Simple, but Solid!
